Estate wine update!
Dear Friends,
This is an exiting time at Canoe, we are proudly working on our estate wine. Early tastings results have been well received.
We are still barreling this wine but it is very near its point of bottling.
First a little more about this wine and it’s grape. The grape is named Baco Noir, as far as we know Canoe Vineyard and Winery is the only winery growing this French Hybrid in Ellijay. The grape is very much disease resistent and we only sprayed once in early May to combat the tough Japanese beetles. So it’s not organic but it’s as close as we can get to organic wine in Pickens County Georgia.
Baco Noir is a red grape developed in France during the 1890’s by Francois Baco. The Baco Noir grapes were harvested mid July and produced a bright red wine with fresh acidity and bright aromas of cherries. We set out to make this a lighter style wine much like a French Nouveau, the wine is lighter in color and light in Alcohol 12%.
Friends, this lovely wine will be as close as you can get to a Georgia produced Pinot Noir, young as this wine might be, it’s ready to be enjoyed now and could use some cellaring if so desired. Consume it slightly chilled (around 55°) and bring over your favorite cheese, flat breads and lightly spiced fares.
